CHARD AND POTATO SPANISH TORTILLA WITH ROMESCO SAUCE




It's another week of cooking with other food bloggers using recipes from Mark Bittman's The Food Matters Cookbook. This week our host is Mireya of My Healthy Eating Habits. Mireya chose Roast Potatoes and Chicken with Romesco Sauce. Romesco sauce is a nut and red bell pepper sauce originating from Spain. This sauce can be used to accompany anything from vegetables, seafood, meats, or even spread on a slice of rustic bread.

I decided to make the sauce following the recipe that Mark Bittman wrote in his cookbook. You can find the original  recipe here. I changed it a little by using Marcona almonds. Marcona almonds come from Spain and they are sweeter, fatter, and rounder than the typical California variety. They are usually blanched and then roasted in olive oil and sprinkled with sea salt. If you have never had one go quickly and try them. They are referred to as the "Queen of Almonds" and they truly are. Marcona almonds will take your cheese and fruit platter to another level. It gave an extra depth to this sauce. I also added a bit of cayenne pepper to my sauce for a little zip.

Keeping in the Spanish theme and using most everything from my garden I decided to make a chard and potato tortilla. Most of us think of a tortilla as something round and flat and either corn or flour, but in Spain it is more of an omelet.


Sliced potatoes are first browned in olive oil, next step is to brown the onions and then leave the onions in the pan and top them with the sliced browned potatoes.


The potatoes are topped with the cooked chopped chard. The beaten eggs are poured over everything and you cook this on top of the stove until the edges have set. At this point you can flip the tortilla over to brown the other side or put it under the broiler to brown the top.

Serve this warm, at room temperature, or even cold, and with a side of Romesco Sauce.

CHARD AND POTATO SPANISH TORTILLA

1 lb. potatoes
1/4 cup olive oil plus 1 TBSP. for chard
1 large Spanish onion, chopped
1 1/2 tsp. salt
1 lb. chard, center ribs discarded
6 large eggs, beaten

Cook chard in one TBSP. olive oil until wilted. Remove from pan, chop and set aside.

Slice the potatoes into 1/4" wide disks. Pour the olive oil into a cast-iron skillet and heat it over medium high heat. Working in batches, fry the potatoes in one layer until lightly browned. Do not let them get crispy. When they are done, let the potatoes dry on a paper towel and salt them well. Keep frying until they are all cooked.

When the potatoes are done, pour out most of the oil and saute the onions. When they are just starting to crisp, turn off the heat. Arrange the onions so they are evenly covering the bottom of the pan.  Arrange the potatoes on the pan in a scalloped pattern. Sprinkle the chopped chard in a layer over the potatoes.

Turn the heat to medium, and pour the egg mixture over. Add a generous pinch of salt. Shake the pan to get the eggs to coat everything in the pan. Let this cook until you see the edges of the tortilla begin to set. Flip the tortilla over in the pan and continue cooking the other side. Or, place pan under broiler for about 5 minutes, or until the top browns.

Let it sit for at least 5 minutes before serving. Cut into wedges and serve with Romesco Sauce.


ROMESCO SAUCE

1/2 cup blanched almonds (I used Marcona almonds)
1 large red bell pepper, roughly chopped
1 large or 2 medium ripe tomatoes, cored and roughly chopped
1 garlic clove
1 packed cup fresh parsley
2 TBSP. sherry vinegar
dash or two of cayenne pepper

Combine the almonds, bell pepper, tomato, garlic, parsley, and vinegar in a food processor or blender. With machine running, slowly add the remaining 2 TBSP. oil; puree into a thick paste, adding more oil if necessary to keep the machine running and scraping down the sides of the bowl as needed. Season with salt, pepper, and cayenne pepper.

PARMESAN AND TRUFFLE TATER TOTS


If you like truffles then make these. I bet you can't eat just one!

I saw them on the menu at Arch Rock Fish a couple of weeks ago. I thought they would be some kind of sophisticated potato dish that might resemble tater tots in some form, but no....they were just jazzed up tater tots. But these are tater tots all grown up. They were so good I couldn't stop eating them. I googled Tater Tots to see how to make them myself. You grate the potatoes with some seasonings, then pipe it into a long tube shape and freeze. Once it is frozen you cut it into tater tots and cook them. And guess what? You spend hours making exactly what you can buy at the store.

So, I bought a bag of Ore Ida Extra Crispy Tater Tots. I put 1/2 bag of the frozen tater tots in a bowl  and tossed them with  two tsp. Truffle Oil. Cooked them according to the package directions. When they were nice and crispy I pulled them out of the oven and tossed them with a little more truffle oil and sprinkled some grated Parmesan cheese on top. Woo  Hoo!

Ron was quite impressed with my culinary prowess.

GREEK POTATOES WITH LEMON VINAIGRETTE



These potatoes are really good. I loved the way they soaked up the chicken broth for a soft tasty center and a crispy outside. The day after, I microwaved them and served them with the vinaigrette. They were awesome.....maybe even better than the first time around. You could probably cut down on the oil as it made a lot of vinaigrette, but it was so good. I think I will sprinkle some feta on them next time.

                            GREEK POTATOES WITH LEMON VINAIGRETTE

1 1/2 cups olive oil (use less if you want, this makes a lot)
5 TBSP fresh lemon juice
2 TBSP. chopped shallots
2 TBSP. chopped fresh oregano or 1 TBSP. dried
1 TBSP. chopped fresh Italian parsley
2 garlic cloves, minced

3 pounds large russet potatoes, peeled, each cut lengthwise into 6 wedges
1/2 cup chicken stock or canned low-salt chicken broth

Pre-heat oven to 425~. Whisk olive oil, lemon juice, shallots, oregano, parsley and garlic in medium bowl to blend. Season with salt and pepper.

Toss potatoes with 1/2 cup vinaigrette on a heavy large rimmed baking sheet. Reserve remaining vinaigrette for serving. Pour chicken stock around potatoes. Sprinkle potatoes with salt and pepper. Roast potatoes until tender and golden brown, turning occasionally, about 45 minutes. Cool completely. Using metal spatula, loosen potatoes from baking sheet to prevent sticking. (Can be prepared 3 hours ahead. Let stand on baking sheet at room temperature.)

Preheat oven to 425~. Rewarm potatoes until crisp, about 15 minutes. Divide potatoes equally among plates. Drizzle some reserved lemon vinaigrette over potatoes.

SWEET POTATOES...TURN DOWN THE SUGAR AND TURN UP THE HEAT!

Dinner the other night was my basic roast chicken, sauteed spinach and SWEET POTATO. Sweet potatoes are naturally sweet. Adding brown sugar or maple syrup and then marshmallows on top of it is uhhhh...not my favorite. I like taking something that is perfectly sweet and turning it into something HOT and SPICY!




                  Twice-Baked Sweet Potatoes with Chipotle Chili

4 small sweet potatoes of similar size, scrubbed
1 to 2 tsp. olive oil
1/4 cup sour cream; more for serving
1/2 to 1 chipotle chile in adobo, minced to a paste
2 TBSP. unsalted butter, softened
1 tsp. kosher salt
1 lime cut into quarters

Heat the oven to 425~. Put the potatoes on a foil-lined baking sheet and rub them with olive oil. Cook until tender, about 50 to 55 minutes. Set on a rack to cool but leave the oven on.

When the potatoes are cool enough to handle, slice off about the top one-quarter (lengthwise) of each potato to expose the interior. Scoop out the flesh of each potato and put in a medium bowl. Leave about 1/4 inch of sweet potato attached to the skin to help retain its structure.

Mash the sweet potato flesh, sour cream, chili paste, butter and salt until smooth. Taste to see if you want more heat. Add more chipotle paste if desired. Mound the mixture into the potato skins and set them in a baking pan. Bake the stuffed potatoes at 425~ until hot, 20 to 25 minutes. Serve with lime wedges and more sour cream.

Serves 4

Be sure to squeeze the lime juice on this. It really makes these extra good.
